So I have recently been obsessed with the “What I Eat in a Day” Tik Toks. Some of them are just so unrealistic while others spark some inspiration. I decided that covering everything I eat in a week on an average week would be fun. Maybe some of you will get some new ideas based on my typical go to meals and snacks.
One of the biggest parts to summarizing what I typically eat in one week is to go over what I buy. It took me a really long time to master buying enough food for just one person and actually using all of it and not having so much food it goes bad. Below is a list of the items that I buy on a weekly basis. I have also included the items that I only have to get about every two or three weeks to show a more inclusive list. Although not every week is this heavy in groceries, this list is inclusive of one of my bigger shopping trips.
I want to be clear that I am by no means claiming that I meal prep, I absolutely do not. However, I do create a loose list of things I want to eat throughout the week before doing my shopping. There is nothing wrong with meal prepping, I just personally get sick of the same things multiple days in a row. I really like taking the time to cook each day even if it’s just putting together a salad because it’s a stress reliever for me. In order to make it more straightforward to read, I outlined what a typical week would look like for me in a table.
For the most part I am pretty good about having a balanced and healthy diet. I absolutely love eating out and my weakness in general is fast food. I was very realistic with placing how frequently I typically get take out in the table above to show a true representation of my week—some weeks are even better and some are much worse. Again, I wanted this to show an average week of grocery shopping and meals. Alison and I both use the app Lose It to track daily calorie intake. Since this basically offers a journal of everything I eat each day, I used this tool to compile my most common meals and snacks.
I wanted to outline and provide links to recipes for some of the meals listed above if anyone would like to try them. Here is a list of those as well as a few other favorites that didn't make the list:
Homemade Penne Vodka—Alison shared this recipe with me and it is amazing! We both tweak it just a little by using half and half instead of heavy cream for a slightly more healthy version.
Shrimp Scampi—I absolutely love this recipe. I personally go a bit heavier with the shallot and garlic because I love both. I typically use fresh shrimp from Whole Foods when making this dish.
Grilled Buffalo Chicken Salad—We don't follow a specific recipe for this one but don't sleep on a simple garden salad with buffalo chicken on top! This is such a simple and delicious way to spice up a salad. Top with a bit of shredded cheddar and ranch dressing and you'll be in heaven.
Bacon Wrapped Scallops—to any seafood lover out there, this is such a nice meal that is a lot easier to make than it looks. I linked the recipe that I follow. I like this one the best because the cook time is perfect for both bacon and scallops!
Lettuce Wrap Chicken Tacos— We don't follow a specific recipe for this one either. Taking Romaine hearts as the lettuce boat, adding shredded or grilled chicken with taco seasoning, tomato, shredded cheese, rice and sour cream makes for the perfect taco!
Overall, I hope this was a helpful guide for shopping for a single person as well as new ideas for meals or snacks. I personally get so bored with food and have to keep finding new and creative recipes to keep me excited about what I’m eating.
